Apple Sauce and Blueberry Cookies

In all honesty I was kind of disappointed when these cookies won the poll. You see these cookies are actually kinda, sorta, well a little bit healthy. And funnily enough even though I really, really want to lose weight the thought of healthy baked goods sometimes just doesn't appeal. So there you have it. But anyways, I made the cookies because I made a promise to my dear readers and you know what? They actually aren't that bad. They certainly aren't a devilish chocolate cookie but they are quite good for a nice healthy treat. These cookies are moist, with a cake-like texture, a hint of cinnamon flavour and some nice chewy bits thanks to the dried blueberries.

So if you are on a bit of a health kick and want some reduced-sugar cookies that actually taste good, then why not give these a try?

Apple Sauce and Blueberry Cookies

Apple Sauce and Blueberry Cookies (from 500 Cookies by Philippa Vanstone)
Makes 30

115g unsalted butter, softened
50g demerera sugar
1 egg
300g plain flour
1 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp bicarbonate of soda
pinch of salt
50g dried blueberries (I used 70g)
225 unsweetened apple sauce (I used 250g)
2 tbsp water (I omitted the water)
  1. Preheat the oven to 180C.
  2. Beat the butter and sugar in a bowl until light and fluffy. Add the egg and beat well.
  3. Stir in the sifted dry ingredients, dried blueberries, apple sauce and water one at a time (I omitted the water).
  4. Drop teaspoonfuls onto a non-stick baking sheet and bake for 12-15 minutes.
  5. Store in an airtight container for 2-3 days.

    To be honest, I prefer treats classified as "healthier" (such as this) compared to chocolate ladden treats. I don't know, it just has a better flavour hehe. So these would be perfect for me :)

    i'll give them a go. i'm getting healthier these days. actually, i was so good on my diet today that i was able to have not one, but TWO of my daughters choc chunk cookies. mmmm mmmm mmmmmmm!

    It's good to try something different. Not every cookie needs to be a heart-killer to be tasty and this one looks heartily delicious.

    You don't often see blueberries in a cookie - cranberries, yes; raisins, yes, but never blueberries. Maybe you'll start a new trend.

    I am always looking for healthy little treats. My husband is a triathlete and I love to send something with him when he trains with his group on Saturdays mornings. These look like they would be perfect. I have dried blueberries, cherries, blackcurrants and cranberries, so I might try them with a mix of fruits.
