Baking Mondays - D is for Doughnuts
This week I was on a mission to make doughnut flavoured cupcakes. I scoured the blog world looking for a suitable recipe and I came across this recipe from Coconut & Lime. Looked good so I thought I would give it a try. I decided to double the recipe so that Mat would have enough cupcakes to take to work and there was my first mistake. Here is a simple mathematics question - what is a quarter of a cup of butter doubled? I can tell you that it is not 1 cup of butter - which is what I accidentally put in. Thankfully the cupcakes still turned out alright even though I doubled the amount of butter in them. While the Coconut & Lime recipe suggested using icing sugar on top of the cupcakes I decided to make a glaze that was on Bakerella's website - wasn't quite what I was looking for, but oh well.
Now the ratings...
Me - 6/10, the cake tasted good but not amazing - and it didn't taste much like a doughnut at all :(
Mat - 6/10, he wasn't sure why there was a need for lemon zest in the cakes. He thinks I should of consulted him on the flavour of the cake and that I need to try again :P
ETA - If I had actually put in the right amount of butter I'm sure these cupcakes would of been great - note to self: redo the batch if I make a mistake like that again (sorry Rachel from Coconut & Lime for not mentioning this earlier).

What a shame it didn't turn out quite how you imagined it! I think it still looks doughnuty!
I hate it when I try to double recipes in my head and I stuff it up, I was put onto a good recipe converter site from How to Eat a Cupcakes blog:
http://www.fruitfromwashington.com/Recipes/scale/recipeconversions.php
I found if I do that first, then I can concentrate on the important things like not forgetting any of the ingredients! hehe
hahaha, you made me laugh because i have SO done that with butter before! I had cookies sliding all over my baking sheets!
The cupcakes still look great though!
I think this looks really really good! Love how it's decorated. Am really craving a donut now!
you are such a good experimenter! i love the things you try.
and now i want a glazed donut something fierce. :[
I've done the double butter thing too! The cake came out really smooth and silky and I couldn't figure it out for a while. :) They were still tasty though.
Your doughnut experiment looks great. I figured you would top a cupcake with a doughnut, but you really went all out!
Wow funky! I have been looking forward to this one!
LOL I am another who has failed at simple maths when cooking!
xoxo
Yay! It looks delicious...sorry to hear they didn't turn out the way you had hoped.
1 cup of butter is fine. I once put in a tablespoon of salt instead of a teaspoon and made my sweet muffins into very salty savoury ones.
haha well it looks beautiful! maybe you should try the daquiri one :) because im totally biased
Hey send one over so I can give a rating too! :D
Although the cupcakes were only a 6, I give those sprinkles a 10!!! :D
Well it looks really tasty!
Doughnut is tough, I think you did a great job trying. What is the flavor for next week - did you figure "E" out?
I've never heard of doughnut flavoured cupcakes... sounds good!
Love all the Cupcake Flaves you have here!
It didn't taste like a doughnut because you didn't follow the directions and put in 2 times the amount of butter. 1/4 cup x 2 = 1/2 cup. Recipes need to be followed correctly (the glaze must not have helped either) for them to turn out correctly and taste the way they are supposed to.
They LOOK delicious, and sound like they were a fun effort if nothing else.... cupcakes can never be all bad. I mean sprinkles and such. Where can you go wrong? -e
