Help with the letter 'i'

We are up to the letter 'i' in my A.. B.. Cupcakes project, and I can't think of anything except for ice-cream. Does anyone have any thoughts?

    Irish coffee? Iced coffee...that's a stretch...iiicing...? Sorry I am totally stumped!

    How about "Indian pudding" ? It's a regional thing here in New England/Rhode Island/Massachusetts

    Can't think of an I flavor, but "inside out" came to mind --- perhaps a filled cupcake with the icing on the inside? :D

    I just randomly found this blog and I'm pretty sure this abc cupcake idea is I-ntelligent, I-nteresting and uummm I-deal?

    I just can't think of anything very exciting starting with I.

    Unless you considered doing Indian Food - like curry cupcakes. I'm sure you could make something very very interesting with that. Cinnamon curry?
